Nut bread (GAPS)

Nuts Bread

My very first GAPS bread. Awesome stuff, smells like a cake.

Recipe :

½ cup    Cashews soaked 1/2h in ¼ cup water)
1½ cup  Almond flour
2 T         Coconut flour
1/2 t.      Celtic sea salt
1 1/2 t.   Baking soda
                ( + optional : 3/4 t. Unflavored gelatin)
4            Large eggs
2 t.         Apple cider vinegar

  1. Preheat oven to 350ºF and adjust rack to middle position. Butter with coconut oil a loaf pan.
  2. Blend the cashews until smooth.
  3. Add the rest. Process until smooth.
  4. Pour batter into buttered loaf pan and bake for 30-35 minutes. Cool for 10 minutes.
