My very first GAPS bread. Awesome stuff, smells like a cake.
½ cup Cashews soaked 1/2h in ¼ cup water)
1½ cup Almond flour
2 T Coconut flour
1/2 t. Celtic sea salt
1 1/2 t. Baking soda ( + optional : 3/4 t. Unflavored gelatin)
4 Large eggs
2 t. Apple cider vinegar
- Preheat oven to 350ºF and adjust rack to middle position. Butter with coconut oil a loaf pan.
- Blend the cashews until smooth.
- Add the rest. Process until smooth.
- Pour batter into buttered loaf pan and bake for 30-35 minutes. Cool for 10 minutes.
